Mission and Goals
The Dietetics Programs
at the University of Texas at Austin are planned to provide excellence through
integration of science-oriented education with professional preparation
for dietetics practice. These programs seek to develop in students an awareness
of the economic, social, cultural, and psychological aspects of behavior
necessary for promotion and maintenance of nutritional well being among
individuals and groups. This knowledge is integrated with scientific and
managerial principles important in restoration of health and/or promotion
of wellness. Critical thinking in the creation and evaluation of protocols
for the provision of nutritional care is promoted.
The Coordinated Program in Dietetics is planned
to qualify graduates for entry-level positions, graduate study and advancement
to positions of leadership in administrative, clinical or community dietetics.
Dietetic practitioners and University faculty associated with the program
subscribe to the philosophy that education with a general emphasis forms
the foundation on which specialization may be built. Balanced preparation
in the primary areas of dietetics recognizes 1) the need for practitioners
with foodservice management, clinical and community skills in the vast non-urban
expanse of Texas, and 2) students' limited ability to choose a specialty
after only two years of baccalaureate education. Diverse facilities in the
Austin area including acute care hospitals, school foodservice and local
and state health departments provide ideal support for the education of
the generalist.
Program Goals and Outcomes - CPD strives to:
1. Prepare students
for successful entry into the dietetics profession.
- Students entering the CPD will
complete the program.
- Students completing the CPD will
earn a passing score the first time they take the Registration Examination
for Dietitians.
- >The mean scaled score of CPD graduates
taking the Registration Examination for Dietitians will be above the national
mean.
- CPD graduates will be employed
in the profession or enrolled in graduate school within six months of
graduation.
- CPD graduates will rate their preparation
as "more than satisfactory" (4 or above on a 5 point scale).
- Employers of CPD graduates will
rate their preparation as "more than satisfactory" (4 or above
on a 5-point scale).
2. Provide
a general emphasis that will prepare students for employment in all clinical
nutrition, community nutrition, food and nutrition management, and consultation/business.
- CPD graduates will judge their
preparation adequate for entry-level employment in at least two areas
of dietetics practice (clinical, community, foodservice administration
and business/consultation).
- Some CPD graduates will have been
employed in each area of dietetics practice within ten years.
3. Provide
credentialed dietitians for the state of Texas.
- The majority of CPD graduates will
work as dietitians in Texas.
4. Provide students with adequate preparation
for and stimulate interest in graduate school in nutrition and related areas.
- A significant percentage of CPD
alumni will enter graduate school within ten years of graduation.
5. Prepare
professionals capable of advancement in their chosen area of dietetic practice.
- A significant percentage of CPD graduates
will achieve advanced certification such as CNSD or CDE within ten years
of program completion.
- A significant percentage of CPD graduates
will hold advanced practice positions such as specialty practice or management
within ten years of program completion.
6. Encourage
graduates to become leaders in the dietetics profession.
- CPD graduates employed in dietetics
will be members of the American Dietetic Association.
- A significant percentage of CPD
graduates will hold elected or appointed positions in district, state
or national dietetic associations.
Student Learning Outcomes - By the
end of the program, students should:
1. Demonstrate the
ability to communicate effectively.
2. Demonstrate an
understanding of the integration of chemistry and physiology with food and
nutrition.
3. Integrate behavioral
and educational principles in the planning of nutritional care.
4. Utilize critical
thinking to formulate appropriate solutions to a variety of problems.
5. Demonstrate ability
to achieve goals working as a team.
6. Achieve
entry-level competence in clinical dietetics, foodservice administration
and community dietetics.
