Kay Southworth, MS, RD, LD
Ms. Southworth serves as director of the program and is responsible for planning and scheduling supervised practice activities in clinical dietetics, and teaches NTR 318 (Assessment of Nutritional Status) and NTR 370 and 371 (Medical Nutrition Therapy). She also works with students during the rotations in hospital dietetics (NTR 245C and NTR 772C). Ms. Southworth was a Certified Diabetes Educator for 10 years and is noted for covering this topic in great detail. In addition to being an expert in Diabetes, all questions on renal disease, pulmonary disease and HIV are sent her way. She enjoys spending time with her granddaughter Isabella.

Suzanne Render Curtis, PhD, MS, RD, LD
Ms. Curtis teaches NTR 334 and the corresponding lab, 234L as the initial foodservice systems management course offered by the department. She is developing a course on Cultural Foods that will be added to the curriculum. Ms. Curtis has taught foodservice systems management at Southwest Texas State University, Oregon State University and Lane Community College in Eugene, Oregon. She has worked in hospital and long-term care dietetics as well as numerous consulting positions. She enjoys music, playing the piano, cooking for her family and friends as well as lavishing attention on her min pin, Heidi.

Lydia Steinman, MA, RD
Mrs. Steinman is a part time instructor at the University and works with the CPD during the fall semester. She instructs second year students in an eight week supervised practice for clinical dietetics. Mrs. Steinman’s role is to teach, encourage, and support the students as they gain competence and confidence as practicing dietitians in a hospital setting. In addition to her work at the University, Mrs. Steinman stays busy with her husband and 2 active sons. During her leisure time, Mrs. Steinman enjoys practicing yoga and playing her guitar and conga drums.

Jane Tillman, MS, RD
Ms. Tillman plans, schedules and supervises students' rotations in administrative dietetics in the fall. She supervises students in their community nutrition rotations in the spring semester. Ms. Tillman has ten years background in school foodservice as an assistant director. Every summer she loves to get back to those roots by teaching at school foodservice workshops for the kitchen employees. Her husband, Mark, and two teenage boys keep her busy after hours.

Monica Meadows, PhD, RD, LD
Dr. Meadows teaches Nutrition Through the Life Cycle and Introductory Nutrition and also supervises students in their hospital dietetics rotations. She enjoys watching students grow into professionals with the guidance, support and encouragement she can provide. In addition to her work at the University, Dr. Meadows enjoys traveling and spending time with her husband, Robert, and her friends and family.
